The main subject is Alpine pastures and cheese-
making: Burons et Buronniers. Estivage Bovin et
Fabrication du Fromage sur la Montagne, by
Andre Desvallees, Jean-Dominique Lajoux,
Claude Royer et Alain Rudelle. This book is a
good model for the publication of a contempo-

rary ethnological material. Photos, drawings and
text marry well and the lay-out is pleasing.

Until recently Atlantic salt lagoons were spread
in apparent uniformity between the isle of Oleron
and the gulf at Morbihan. Description and analy-
sis of the production technique revealed, how-
ever, a diversity related to the scope of ecological
and socio-economic exploitation with the possi-
bility of salt-trade or even technical systems.
This research shows a method of technical
analysis and is a contribution to the study of
forces of production. The technique appears here
as a compromise between the material world and
certain social manifestations of society.
Along the bay of Biscay salt is got through
evaporation of the water in special basins, which
at a quick glance resemble Celtic fields. The
special tools, the working methods the whole
organisation, transport, storage lay out of the
basins, climatic conditions and the social organ-
isation are well described and illustrated in this
interesting work.
